Spring brings colors to nature and freshness to the kitchen. It's time to put away the heavy winter foods. Get inspired with three recipes for spring salads that are healthy, quick and look beautiful on the plate.
Recipe No. 1: Spring Salad with Strawberries, Arugula and Goat Cheese
For 2 servings | Preparation: 10 minutes
Ingredients:
- 100 g of fresh rocket (arugula), 200 g of strawberries
- 80 g goat cheese, 30 g walnuts
- 1 spoon of honey, 2 spoons of olive oil, 1 spoon of balsamic vinegar
- Salt, pepper, a few leaves of fresh mint
Procedure:
- Wash and dry the rocket. Cut the strawberries in half.
- Fry the walnuts lightly in a dry pan.
- Mix together olive oil, balsamic vinegar, honey, salt and pepper - make a dressing.
- Pour the rocket onto a plate, add the strawberries, nuts and goat cheese. Pour over the dressing and garnish with mint.

Tip: Raspberries or blueberries can be used instead of strawberries.
Recipe No. 2: Warm salad with bulgur, roasted vegetables and lemon dressing

For 2 servings | Preparation: 25 minutes
Ingredients:- 150 g bulgur, 1 red pepper, 1 zucchini, 200 g cherry tomatoes, 1 red onion
- 3 spoons of olive oil, juice and zest of 1 lemon
- 1 teaspoon of ground cumin, a handful of fresh parsley, salt and pepper
- Cook the bulgur according to the instructions (10-12 minutes), drain and let cool.
- Cut the pepper, zucchini and onion, cover with olive oil, salt and pepper, add cumin.
- Bake in the oven at 200 °C for approximately 20 minutes. Add the cherry tomatoes in the last 5 minutes.
- Mix bulgur with roasted vegetables, add lemon juice and zest. Sprinkle with parsley.

Tip: You can use couscous or quinoa instead of bulgur.
Recipe #3: Fresh Quinoa Salad with Avocado, Cucumber and Lime Dressing

For 2 servings | Preparation: 20 minutes
Ingredients:- 150 g quinoa, 1 ripe avocado, 1/2 cucumber, 1 red pepper
- Handful of sprouts, 2 spring onions
- Juice from 1 lime, 2 spoons of olive oil, 1 spoon of sesame oil, 1 spoon of soy sauce
- Fresh coriander or parsley
- Rinse the quinoa, cook in twice the amount of salted water for about 15 minutes.
- Dice the avocado, sprinkle with lime juice. Dice the cucumber and pepper.
- Prepare the dressing: lime juice, olive oil, sesame oil, soy sauce.
- Mix quinoa with vegetables, cover with dressing, add sprouts and sprinkle with herbs.

Tip: For a heartier option, add grilled chicken breast or baked halloumi.
