Cherry pie recipe: the sweet smell of spring in your home

With the arrival of spring and the beginning of summer, the kitchen changes. Heavy winter desserts give way to lighter cakes full of fruit, aromas and colors. And the cherry pie is one of those that almost everyone likes – it is simple, juicy and reminiscent of childhood, grandmother's kitchen and carefree weekends.

You can make this recipe without complicated procedures and expensive ingredients. It goes well with coffee, for a family visit and as a sweet spot after lunch.

Why cherries?

Cherries are a symbol of the beginning of summer. They are sweet, juicy, and when baked, the whole apartment smells beautiful.

  • give the cake a natural sweetness,
  • they remain juicy even after baking,
  • goes well with soft dough and fine crumb.

Plus, cakes with fresh fruit feel lighter than creamy desserts – and that's exactly what we're looking for in spring.

Ingredients for baking cherry pie

The recipe is ideal for a classic baking sheet or a round form (approx. 26 cm).

For the dough:

  • 200 g plain flour,
  • 120 g of sugar (semolina or cane),
  • 1 baking powder,
  • 2 eggs,
  • 100 ml of milk,
  • 100 ml of oil or melted butter,
  • a pinch of salt,
  • vanilla sugar or extract.

For filling:

  • about 300-400 g of fresh or compote cherries,
  • a spoonful of semi-coarse flour or starch (for coating the cherries).

Optional:

  • crumbs (flour, butter, sugar),
  • almond slices,
  • Icing sugar for sprinkling.

Step by step procedure

Preparation of cherry pie - tipping into the mold

Preparation of the cake takes approximately 15 minutes, baking approximately 35-40 minutes.

  1. Dough preparation. Mix flour, sugar, baking powder, salt and vanilla in a bowl. In another bowl, whisk the eggs with the milk and oil (or butter). Combine the dry and liquid ingredients into a smooth dough.
  2. Preparing the cherries. Pit the cherries. If you use compotes, drain them well. Lightly coat them in flour or starch - this will prevent them from sinking to the bottom of the dough.
  3. Folding the cake. Pour the dough into a greased and lined mold or onto a baking sheet. Spread the cherries evenly. If you like crumb or almonds, add them on top.
  4. Baking. Bake in a preheated oven at 180°C for approximately 35-40 minutes, until the surface is golden and a skewer inserted into the center comes out clean.
    • Tips to make the cake even better

      • Softer taste: add a spoonful of sour cream or white yogurt to the dough.
      • A more aromatic version: try a pinch of cinnamon or grated lemon peel.
      • Quick variation: you can combine cherries with raspberries or currants.

Cherry cake is very variable - you can adapt it to your taste and what you have at home.

      How to serve the cake

The cake tastes great on its own, but you can elevate it further:

      • lightly sprinkle with powdered sugar,
      • serve with a spoonful of sour cream or whipped cream,
      • serve with coffee, tea or homemade lemonade.

It is also ideal for the next day - it often tastes even better.
